Black Currant Cake


This cake is good served cold or hot as a dessert with lashings of cream or yogurt!


Ingredients

  • 3
    eggs
  • 3/4 - 1 Cups
    sugar, depending on tartness of currants
  • 1 Cup
    melted butter
  • 2 1/2 Cups
    self rising flour
  • 1/4 Cup
    milk
  • 2 Cups
    frozen CurrantCâ„¢ Black Currants

Instructions

  1. Beat eggs until thick. Add sugar and beat again. Add melted butter and beat again.

  2. Mix in flour and milk for approximately 3 minutes.

  3. Stir in the black currants. Put into greased baking tin. Sprinkle the top with sugar.

  4. Bake at 350 degrees for 25 - 30 minutes or until cooked.
