The Currant Farm’s Black Currant Banana Bread


  • 3
    Ripe bananas
  • 1/4 Cup
    melted butter (I love real, high quality butter but you can use margarine if you choose)
  • 1 Cup
  • 1 1/2 Cup
    unbleached flour
  • 1/4 Teaspoon
  • 1
    egg, beaten
  • 1 Teaspoon
    baking soda
  • 1 Cup
    1 cup of CurrantC™ No Sugar Added Dried Currants (not those raisny imposters called “currants” but genuine Black Currants)


  1. Preheat oven to 350°F

  2. Mash the bananas in a bowl. Add the egg and butter.

  3. Put all the dry ingredients together into a fine mesh sieve or sifter and sift into the bowl. Mix well with a wooden spoon.

  4. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes.

  5. Slice and serve.
