Pork Chops with Blackcurrant Sauce


  • lean pork chops
  • 2 Teaspoons
    olive oil
  • 4 Tablespoons
    dry sherry
  • 1/2 Cup
    frozen CurrantC™ Black Currants
  • 4 Tablespoons
    CurrantC™ Black Currant Preserves
  • 2 Teaspoons
    Dijon mustard
  • 1 Tablespoon
    white wine vinegar
  • salt and freshly ground pepper
  • orange slices (optional)


  1. Brown pork chops in the oil. Add the other ingredients.

  2. Mix well until the jam has melted.

  3. Cover pan and simmer for 15 - 20 minutes until the chops are cooked.

  4. Transfer the chops to a serving dish and keep warm.

  5. Boil the sauce until thick and glossy then pour over the chops.

  6. Serve with new potatoes and broccoli or other seasonal greens.
